You know, my sister actually does that from time to time. She is a teacher and single parent so she's stressed for time just like anyone else. She will spend a small portion of her Sunday making meals for M-F and it works really well for her. Good Luck!!
When I was a young(er) single working mother of 3, I cooked 1 Sat every 3-4 weeks and made casseroles. It worked like a charm. Giving up one day for a marathon of cooking so we could enjoy ourselves the other Saturdays was well worth it.
If you can handle boring/predictable/healthy meals, I've been using veggies out of the garden (squash and the like) and broiling them, then baking potatoes or (gasp) instant mashed potatoes and then grilling some kind of meat. Easy peasy and QUICK!
